Our chef visits the Patong markets first thing to ensure that the kitchen is supplied with the very freshest fruit and vegetables and the choicest cuts of meat. Of course, fine dining would not be complete unless accompanied by an appropriate bottle of wine. Our cellar offers a wide range of quality vintages.

Thai cuisine

If this is your first visit to Phuket and you are new to Thai cuisine you have a great treat in store for you. Clearly distinct from European tastes it is also different from Chinese and other regional kitchens. Within Thailand there are many variations in preparation and local specialities. Patong, of course, is renowned for its seafood specialities.

Phuket is noted for exceptionally hot curries which even the locals treat with respect. On the subject of spicy food, if you are new to the experience it is best to ask for dishes to be ‘mild’; fire can be added but not removed. As you continue this taste exploration (and we are sure you will) you will become used to hotter flavours which bring out the full subtlety of the dishes.If by misfortune you take a bite which is way above your tolerance threshold then drinking water just makes things worse. The best remedy is to follow with a large spoonful of steamed rice.

At the hotel, we are often asked to recommend wines to match Thai food. It’s best to go with a powerful vintage; Shiraz is a good choice for a red, and Gewürztraminer for a white. Perhaps the best selection is one of Phuket’s ice cold beers.Here’s a few suggestions to get your teeth into.
